Could I Have Some Fat With My Fat?

I spent 2 hours in the concession stand at our local highschool tonight, trying to be a good parent volunteer. My wife does it all the time and is kind of the Concession Czar, organizing the food, the volunteer parent staff, and even attempting to vary the snack menu with healthy choices like yogurt and granola bars.

The healthy stuff does not sell well.

Ask me about the hotdogs, nachos, and fries.

I was the hotdog griller/ french fry fryer.

I had 2 commercial fryers going and could not keep up with the demand for fries ... CHEESE fries. Grease soaked french fries with a ladle of nacho cheese sauce dumped on top.

I could not wait to get home and cook something healthy.

How about this?
A chicken breast coated with some Cajun seasoning, sauteed in virgin olive oil, brown rice sauteed with a little olive oil and garlic then cooked in chicken broth instead of water, and some black beans right out of the can, but simmered with some chopped garlic, oregano and thyme.

A few peppers for some color and contrast and a glass of cheap screw top wine.

Well, maybe two glasses.

Well, I'm impressed! I didn't know Southerners used napkins.

Pablo,
Yes we have begun using both napkins and those newfangled fork thingies. Still working on that one.

I admire anyone who "could not wait to get home and cook something healthy". Your meal sounds so much better than the concession crap. We are what we eat. I had to politely refuse donuts at work today.

Deb,
This time of year is a constant barrage of sweets and treats until the Christmas holidays are over.

My view of fries and doughnuts is this: They are tastey wonders, but I space them out so they are a treat and not a regular thing.. and when it comes to a doughnut, I want a Dunkin Doughnuts Chocolate Glazed with coffee. Okay, maybe two.

roger,
of course, no one else will have a clue to the meaning of that comment :)

Except me, and I can confirm that you are vraiment un canard. (Just kidding.)

That looks pretty good, except for the peppers. You can have all my peppers.

Two glasses? Why not make it three? Isn't wine supposed to have fat cleaning properties? You could eat all the cheese fries you wanted, so long as you had some wine afterwards :D

And wait another minute! Is that meat from the armadillo of the prior post? I'm beginning to think you may have Arkansas roots (or southern Missouri).

Rurality,
And you can have my tomatoes. I can eat them any way, but fresh like in a salad or on a sandwich. Shudder.
Abiento!

Mrs. S,
Supposedly, tho I did watch a little documentary that said the "red wine cures everything" studies were funded by the wine industry. Uh oh.
Still, there was even more good news about red wine this week ... so I am , as always, a doubting, (but hopeful) Thomas.

Pablo,
I have never been to Arkansas or Misery, so I think my roots are just good ol' Florida white trash.
Not quite so trashy as scrounging roadkill (yet), but a little on the trashy side otherwise :)

Our ex-governor, Skink, now he knows roadkill.

Now I am off to a soccer tournament in the town of Alachua.
La Chua: site of a huge cattle ranch run by the Spanish colonists in the 1600's, now the site of soccer competition.
I'll try a real post later today.

Pablo's comments always crack me up. I'm sitting here, chuckling over my morning coffee.

I like Dunkin Donuts, but like you.. I don't eat them often. LIfe is all about balance and life without their french crullers or a good Krispy Kreme donut would be a very boring life indeed! I've been buying their ground roast coffee when it goes on sale and it's delicious.

Alachua!! I miss it up there. Must be fireplace weather right now. Hope the team wins big!

I tried to comment last night, but my computer kept spinning out on blogger sites. Your dinner looks delicious, absolutement. C'est vrai, mon ami. What kind of peppers are those? They look quite tasty. And what's this news, you don't like fresh tomatoes?

There is something about my computer and your site. Even though I refresh my cache EACH TIME BEFORE I VISIT YOUR SITE, I still find that I am missing posts and don't see them until days after everyone else has been by and commented. Or, as was the case with this post, all I see is the photo but none of the text. I get confused, and it is only after several refreshes and revisits that I see the text. Blogger still hates me, I guess.

Oh, man! That looks sooooo good! Guar-aaahhhnnn-teeee! You can have my peppers, too. But I'll take all the black beans you can dish up. Maybe add a little garlic to that chicken and some saffron to the rice and I'm in hog heaven.

skink the gov! i don't know if the hiassen character has any tiny basis in history, but good reading. [maybe i'm just hoping that other states have something on the governator.]

we do a lot of sauteed chicken and rice around here. for pilaf, break vermicelli into tiny bits, sautee until brown, add rice and chicken stock, maybe a dash of garlic, dill, pepper, paprika, and/or basil.

peperoccini is mostly a holiday snacky kind of thing in our house [along side the olives, pickles, crackers, cheese, dip, raw veggies], but not a bad idea as a veg fill-in!

i don't like raw tomatoes, either. they make my mouth itch. cooked, they are fine.

Laura,
True, balance is the key.
The fireplace is crackling behind me, it's 46 outside.
As for Pablo ... you have to watch him every minute... he's a rascal.

Robin,
Those are Greek pepperoncinis and there are a couple of jalapeno slices on the rice.
All my life I have liked things made with tomatoes, but not the fresh item. Weird.

Pablo,
I don't know about the other problems, but your first comment here happened in the few seconds when the pictures went up before I composed the post. I post the pic, save as a draft immediately, so I can write offline and then publish. You got in there after the picpost, but before I wrote anything. I think I did something similar at your site awhile back.
I can't speak for Blogger, but PureFlorida does not hate you :)

SophieMae,
I detect some Justin Wilson influence. Love those black beans too.

Hoss,
It's easy and quick.
... and healthy.

Kathy A,
I concur with all those suggestions. Sounds great.

To all, we won the first day of the tournament and tomorrow we go again for the final.

Rick,
It doesn't matter what language a pretty girl speaks.

The wine was a few steps above Boone's Farm ... just a few ...
