The canning jar is full of my mom's datil pepper relish. This is basically a seafood sauce made from tomatoes, datil peppers, and other good stuff. The bottle is simply datil peppers and vinegar. Give it a little time and you have a very flavorful vinegar for sprinkling on chicken pilau, shrimp pilau, sausage pilau, neckbone pilau....any thing you want. The peppers are fresh picked datils. They turn a beautiful orange when fully ripe.  Posted by Picasa

No mo emu.

I rode back down "emu blvd." yesterday looking for signs of high ostrich/emu ranch fencing and could see nothing. I wonder how far they had wandered that day?
