Fried Fish and Cardinals

Above, you see Bear inspecting my dinner plate for possible flaws in presentation.

I told him, "This is not about pretty, it;s about eating."

He seemed fine with that, especially after I mentioned that I had fried up all the little dark meat "fishy" trimmings for him.

Those little tidbits allowed me to eat MY fish without a drool damp Lab muzzle pressed atop my thigh.
We both love good fried fish.



In fact, fried fish is the only way to eat fish ... in my world.



SHE likes blackened fish and while I agree it tastes pretty good, it's only a minor second to good fried fish with a thin and crispy corn meal crust.


If you are caloriphobic, dwell on this for a moment ...


Certainly breaded fried foods are not low fat. Even fried quick and hot, the breading will absorb some oil.


But ...


I think we should take a look at the traditional sides ... the evil minions of the American plate ... especially the restaurant plate.


Order a fried catch of the day in any restaurant and the typical  meal will include one or two hushpuppies, mounds of french fries or a baked potato with butter and or sour cream on top, mac and cheese, baked beans, and if you are at a Red Lobster (ugh)... baskets of cheese biscuits.

Now wash that down with unlimited soda ... don't get me started on this one.




THOSE are your cuprits.


Run back up and look at my plate.
I planned to eat a bunch of fish, ... fried fish, so my only side is unlimited salad (there really is other stuff in that salad, I know it looks like lettuce only).
The red stuff is homemade datil relish.



This concludes my soapbox session on American eating habits and also my defense of fried fish.

Summation: Plan your sides and don't eat it every day.

You are welcome.




But what about the blueberry crop you ask?

The cardinals are quite pleased with this year's blueberry crop as am I. As I have mentioned before, we share the crop.
There is plenty for both feathered and nonfeathered blueberry lovers.

I like them cardinal style, eaten right in the thicket, but in this blistering heat, what I really like to do is cram a bunch of them into some yogurt and dig in.

FC,
I agree about Red Lobster, and almost any other chain restaurant. Our new family rule is that if we are eating out it is somewhere local and fresh. Of course the children want eat anywhere there is a Mc in the name. Yuck! Taking James out for his 14th birthday today and I just know he is going to want Outback. I prefer out back in my yard grilling, but that's not going to cut it for birthday food. Yoplait is good but Light is too redundant for me. Thanks for sharing and maybe next time I will go for salad instead of cheese grits. LOL. Billy

I bought a deep fryer this year just so that I can keep up with all the fish my son brings home every week. Damn, that boy can fish!

I agree about the fried fish, although I did have broiled Spanish mackeral once that was pretty darn good. And I agree about the sides too. Occasional fried protein is fine is you choose your sides well. :) A big salad is my fav!
We've gotten quite a bit or rain (after I started watering them) and my blueberries are doing MUCH better. Live and learn!

One thing you forgot to mention is that the type of oil that you use is very important to the healthyness of the dinner too! Believe it or not some oils are actually good for you, in small quantities of course!

One of my favorite comedy bits is an old one from George Carlin: "Scientists have now found that saliva causes cancer, but only if swallowed in small quantities over a long period of time!" ;-)

I didn't forget, just thought everybody knew that by now. Even the good oils tote twice the calories of carbs and proteins, and calories were my focus.
Thanks for the reminder ... even if I do tend to deep fry in good ol' peanut oil ... which is not the best of the oils.

I have no beef with calories. I have to agree, fish fried is fish best, though I do enjoy a nice smoked salmon... or even the occasional baked fish if it's done proper.

We also had a beautiful rain storm this afternoon. Sooooooo refreshing. Just wish it had lingered longer.

I'm with ya all the way on Red Lobster, fried fish, cornmeal coating. but dude! get yourself some GOOD yogurt. Just for me, try a Fage 0% any flavor, or get the plain and get creative. OMG that is some good stuff!

OK, now I have a drooling Zick muzzle parked on my keyboard. Whyyyy did you have to fry fish on my computer? I haven't even had breakfast yet (whiiine)

HOWEVER we picked blueberries the size of grapes yesterday--$41 worth, gulp! (My kids love to pick fruit!) and we are slamming them into Trader Joe's organic plain yogurt with some (I know, I know) Splenda and vanilla stirred in, 'cuz that Yoplait stuff you're chunkin' down is full of sugar cane. We prefer artificial sweetener based on chlorine molecules, which one of my chemist friends swears will kill me eventually. Like George Carlin said about saliva.

Heartily agree on the big mound o' green and small deck o' protein; that's how we like it here on Indigo Hill, too, and I'm proud to say the only way soda gets in our house is if somebody brings their own bottle.
Having said that, the new fingerling potatoes are in and we all have a serious weakness for creamy new spud wedges rolled in olive oil and kosher salt and baked until they're puffy and golden. Shoot me now, that's heaven.
Word verification: fachews. Yeah! What are the odds?

I've heard rumors of people paying for blueberries, but I thought it was just a bit of mythology, ... like skunk apes and tofu.

Those new potatoes you described are definitely heavenly. They would go great with the cajun chicken halves I roasted over homegrown oak coals this afternoon.

I'm so hungry reading this post at 7 am, yeah, La Diva could do fried fish this early, fo sho!

I don't think I've ever been to a Red Lobster in my life, I prefer to go out to hole in the wall ethnic restaurants or restaurants/cafes where there is just one in the entire world! I don't really support chain restaurants for many reasons, I feel they are a blight on the landscape and Florida is generic enough.

However, I'm lovin' your fish!!!! And lookit Bear, so close, so patient, so hungry! I like to take fish and marinate in hot sauce and then add a seasoned corn meal batter, spicy, crunchy good! And my yogurt of choice is Greek yogurt Fage plain, add Florida organic honey and berries and I'm good to go! PS: I've never had fried cardinal, I hear they are fiddly to eat. ;)
