Key Lime Pie...the perfect end to any Florida meal.

I, too, like mine with whipped cream rather than meringue. However, while at the beach this year, we made one with meringue, and, since we had no vanilla, we flavored the egg whites with coconut rum, and then sprinkled it with flaked coconut before baking it. Not bad!
Of course, I could just mix the Nellie & Joe's with the condensed milk and happily eat that....
Is it possible to send two pieces of that delicious looking pie to us? :) Well really, make it four, we'll save two for tomorrow! I've never had key lime pie, it looks great. I'm going to have to try to make it. Thanks for the recipe.
rm, I like meringue also, but too me true key lime pie has whipped cream. My mom makes a great lemon meringue pie with traditional flaky crust. That rum goes well with the lime juice too :)
Zanne, I'm thinking the pirate doesn't share. They were both on the train trip, RD's never had it, and yet DPR had a "passable key lime pie" on the train trip. Hmmmm...
RD, Unlike pepper seeds and fossils, creamy delicious pie doesn't mail well. I'd probably have Homeland Security after me after the whip cream leaked out...
DPR, No more sneaking out to the dining car without RD.
Floridacracker--If dpr takes RD to the dining car with him and she has early signs of complete memory loss, then she can't held accountable for anything she writes. I think that's the law somewhere. I did have a taste of that passable key lime pie. In fact now that I am reminded of it, the person we were sharing the booth with noticed how much I was enjoying it, and suggested I might have gotten my own piece. Yikes, busted on my newly acquired memory loss. Not to worry, I won't remember any of this by tomorrow!
Once in Tallahassee, my mother made a key lime pie. She felt it should, most properly, be green, and was disappointed that there wasn't any real green in the key limes. So she put in green food coloring, her first mistake.
Her second was to forget to pre-bake the crust, so we pour out the (green) filling and put the crust back in the oven. Ten minutes later we opened the oven door and there was this marvelous green dome hovering over the pie crust.
In the years since, she's cleaned up her act considerably.
